So they always say "You never know what you have until it's gone," and personally I haven't experienced much of that. I usually experience the "You always want what you can't have" and avoid the other by getting over things fairly quickly. However, I have to admit that I've been the cause of the former feeling in several people.
Now I know that sounds a bit conceited, but all but one guy I've dated (in any loose interpretation of the word "dated") has come back within 6 months to a year (or at least some point) and tried to get me back or professed their remorse for letting me go. It fascinates me that I should have such a pull on them all. What is sad for them though, is that with my ability to get over things so quickly, by the time they come back I'm completely disinterested.
The most recent case of this is Travis. A guy I was seeing right before I met Matt, and who I really had liked at the time. He stopped calling, then I met Matt and continued on with my life. Well a few months ago he started texting me again, and just yesterday we had an interesting conversation about how he feels like an idiot because he really liked me and he screwed things up.
The moral of this story? The guys I date need to wake up BEFORE they miss their chances! The moral applying to me? That even if it fails with the guy I'm currently dating, there will be others and he will regret it. Mwahahaha! That makes me all warm and fuzzy inside! It's always nice to know that you're really hard to forget, and that you have the uncanny ability to get over them much more easily than they do you.
